Description: Fennel’s delicate wispy leaves and licorice flavored, smooth white bulbs are extremely adaptable in the kitchen. The white or pale green Fennel bulb grows stalks topped with feathery green leaves on which flowers grow and produce fennel seeds. The bulb, stalk, leaves and seeds are all edible. Bulb production occurs in the fall but the foliage can be picked for salads and garnish throughout the season. Slice the bulb very thin to use in salads or slaws.

Fennel is a perennial herb that is typically grown for its edible qualities, although it does have ornamental merits as well. The entire above-ground parts of the plant are edible, and are usually harvested from late summer to early fall. The edible parts have a savory taste.
